Poached eggs for the first time today.

well managed to poach the second two for Will, but the first two almost turned into eggdrop soup. Live and learn, wanted to do something different today instead of frying, scrambling, or turning them into an omelette.

You've got to use really, really fresh eggs for poaching. Lacking that, if you stir in a teaspoon or so of vinegar to your simmering water before adding the eggs it will cause the whites to coagulate a bit faster and thus stand a better chance of holding together.

I used vienegar, it just wasnt simmering enough.
